Truth be told this recipe came about in an attempt to use things I had in my fridge to make a “fancy” appetizer. It turned out to be one of new favorite things to make.
Ingredients:
- 1 Bag of Habanero Shredded Cheese (or another spicy cheese you have)
- 1 Package of spreadable liverwurst or liver spread you prefer. Can be found at any European store and some regular grocery stores.
- 1 Package of Prosciutto (or if your fancy get the deli counter to cut you some)
- Salt
- Pepper
Cooking Instructions:
- On a large flat baking pan place a non-stick silicone baking mat. If you do not have any spray the pan LIBERALLY with pam. We need to make sure the cheese does not horribly stick to the pan.
- Cover the entire pan with one layer of cheese but ensure you do not have much space between the cheese shreds. When it starts melting it will all form together but if you put too little cheese you will leave large holes in your cheese crisps.
- Turn the oven to 400° F and place your tray in oven on the rack 2 notches down from top. You may be wondering why we would not wait till oven is pre-heated the trick with making cheese crisps is to get them cook a little slower then crank the heat up at end to get final crisp.
- Every 2 minutes check your cheese and with a spatula gently nudge the sides of it to try to form it as close to a rectangle as you can. If its not perfect it does not matter we will be cutting off the too crispy edges at end.
- When the top is getting close to crispy and brown but not dark brown take the pan out of the oven and section off the cheese rectangle into 3 with your spatula. Put the pan back in the oven for a 2 minutes and take it out again.
- Add a bit of salt and pepper over the pan.
- Flip over your 3 sections. You will notice the bottom is not nearly as crispy as your top is so we need to put them back in the oven for at least 3 minutes to get that side crispier. There is no exact time for this so you need to be watching the color constantly it is very easy to burn.
- Take your pan out the oven and place cheese crisps on cutting board salt and pepper them and leave them for 8 minutes.
- Slice up your cheese crisps to whatever size you would like to make your crisps but be sure to take off any edges that are too dark.
- Apply a generous spread liverwurst to each crisp and place a piece of prosciutto on top of it.
- Your done.
If you are using this app for a larger crowd I would recommend cutting the cheese crisps smaller to make them easier to eat. It also helps that this is a dish that can be served room temperature.
